Tortellini Mamma Rufina – the Ambassador’s mother’s soup
Ambassador of the Italian Democratic Republic in Vietnam – Lorenzo Angeloni is a loyal customer of KAfe.
Lorenzo said that when he was a child, his mother – a woman with the beautiful name Rufina – insisted on cooking this Tortellini dish for him only on one occasion of the year – Christmas Eve.
Although always very confident with Italian dishes, this time chef Joel could not avoid being a little nervous – because Joel wanted to recreate a dish associated with childhood memories and the image of his deceased mother for Lorenzo.
Mr. Lorenzo enjoyed taking pictures of Tortellini Mamma Rufina soup cooked according to his mother’s `family` recipe to `show off` to friends and family.
Cacciatore – dish of the hunter’s wife
The KAfe’s Christmas party this year also includes oven-baked chicken Cacciatore, beef stewed with Balsamic vinegar and grilled vegetable salad. Cacciatore – a typical Christmas dish of Northern Italian people.
For the same reason, it is not difficult to cook Cacciatore, but it is not easy to cook it well: the chicken must be cooked, soft, sweet and absorb the spices.

The perfect dessert
Spiced grape and pear tart with hot egg sauce, medium crispy, slightly creamy combined with cold, lightly sweet Croccante alla Fragola ice cream made from Da Lat strawberries and macadamia nuts mixed with crispy caramel sugar will be the ending.
